I'm currently evaluating the WWJ and WWJ WMS capabilities. Is it possible to share a layer, such as a RenderableLayer, between multiple instances of a WWJ application so that each WWJ instance could then manipulate the Renderable objects on the layer independently?

You would have an instance of that layer per client,
and as long as you have some backend (like a spatial database or WFS) where you pull and save data then each user will be able to see and edit the same objects if you so choose. WWJ is an extensible API, so you can build your app around it and have the full capabilities of Java at your disposal.
